Lentil Soup Recipe

I received a bunch of inquiries about my mom’s Lentil Soup….and what makes it so special. So I called her this afternoon to get it all down exactly. If you know my mom this can be a little difficult. This is because my mom is a great cook, but doesn’t use or follow any recipes.  This is what I got from her. Lentil Soup

1 pound of dried Lentils

2 carrots (chopped)

1 onion (chopped)

2 to 3 stalks of celery (chopped)

Olive oil

1 small can of diced tomato

Salt and pepper to taste

1 box of frozen chopped spinach (optional)

First, you are to place your lentils in a large pot with about four to five quarts of water over it on a high heat. You want to bring it to a boil (about 20 minutes).

Next, you will lower your heat to a medium and place in your carrots, onions, celery, and drizzle of olive oil, can of tomatoes, salt & pepper. You will let this all simmer together for at least two hours.

Then, my mom says if you would like to make the soup with the spinach she adds it now at the end and heats it through.  She also says that it is at this point that she boils a pot of water to cook some pasta (small in shape) to add to the soup before serving.

Finally, mom said that you are to mix your pasta and your lentil soup and taste to see if you would need any more salt or pepper. She also says it is great to serve it with grated parmesan cheese and semolina bread.
