Jalapeno Oil 2 Jalapenos, sliced (seeds intact – stem removed)
To make: lay the sliced jalapenos in the bottom of a pan and pour in enough Olive Oil that your jalapenos will sit in and barely cover then. Place over medium heat and barely bring to a simmer. (You want to warm your jalapenos, not really cook them.) Turn off the heat, cover your pan, and remove from the heat and let it steep all together - about 30 minutes. Then place your oil and jalapenos in a blender or food processor and briefly process to have you jalapenos finely chopped. You can store, covered in are frigerator up to two weeks.
