I use to enjoy a dish much like this one at a Tapas Bar in Phoenix called Lola's. I miss that place. It was intoxicating to smell this dish when it was served to you. I think I can honestly say that I was never there for a visit without ordering it. This is as close I could get to theirs. 1 can of Chick Peas, drained
2 cloves of Garlic, chopped
¼ tsp of Cayenne Pepper
¼ tsp of Cumin
½ tsp of Smoked Paprika
2 – 3 tbsp Olive Oil
Lemon Juice (from at least one lemon)
Sea Salt and Fresh Black Pepper
First, in a motor and pestle grind you Cayenne, Cumin, and Smoked Paprika. Then add your garlic and work it into a chunky paste.
Next, over medium to high heat warm your olive oil in a frying pan. Add your garlic and spices paste and sauté- be sure not to burn the paste. Add in your chick peas and stir well and heat through.
Finally, add in your lemon juice, sea salt & pepper and stir well. Taste to adjust your seasoning. Serve warm.
Note: the Tapas Bar I use to enjoy this dish at served it with spinach. They would toss it through in the end until it just wilted. It was fantastic.
