Pork Chops, with Cranberry Apple Ginger Sauce, Brussels Sprouts with Leeks, and Baked Potato

With the autumn still in the air and the holidays approaching I was in the mood to cook. Yes, I am almost always in the mood to cook; but I was in the mood for something representing the time and the season. I know Brian loves Pork Chops and just about anything else with the season I thought this meal was fitting. I hope you make some of it, if not all of it.  

The pork chop was rubbed simply with olive oil, sea salt, and black pepper and roasted in the oven at 400 degree until medium. The baked potato was just plain with butter and sour cream. The cranberry apple ginger sauce; and the Brussels sprouts with leeks have recipes to follow. This is a simple meal that comes together easily and tastes wonderfully. Enjoy it!
