Kale is fantastic because of all of its health benefits and how versatile it is. It is so tasty, and I love the texture of it. It is perfect for the winter with its hearty leaves and vitamin boost. I do not know who would not love it. Although I adore all of the ways you can cook it; I really enjoy it in a salad. I know that I can make almost anything into a salad but a Kale Salad really is terrific. The leaves of the kale hold up well to bold flavored and thick dressing. This is a must try if you have not had a Kale Salad yet.
1 bunch of Kale (washed well), tough ribs removed and chopped small
1 Carrot, cut into bite size sticks
¼ cup of Hazelnuts, toasted and chopped
1 tbsp of Mayo
1 tbsp of Grainy Mustard
Zest and Juice of 1 Lemon
¼ tsp of minced Garlic
2-3 tbsp of Olive Oil
¼ cup of Parmesan Cheese, grated (more if you like)
Salt and pepper to taste
First, in a bowl place your kale and carrot and get ready to make your dressing. In a separate bowl, place your mayo, mustard, lemon zest, lemon juice, and garlic. Whisk your lemon mixture together, and then add in your olive oil (as much as you would like depending on how thin you would like your dressing to be) and whisk. Fold in your Parmesan and season with salt and pepper.
To serve; pour a bit of dressing over your kale & carrots and toss well. I like to taste and see if my seasoning needs to be adjusted. I then top it with the hazelnuts and serve.
