It is official; my job has entered its “busy” season. The kitchen I work at is in high gear mode for a huge event that we produce. For the next month it will be nonstop whisking, beating, icing, folding, layering, and melting chocolate. Oh joy! Let the fun begin. As I was battling traffic on my way home the other night I was thinking about dinner. It is not uncommon when I am busy like this to pick up take out of some kind, or just throw together a pasta dish. But I wanted to make something easy and equally satisfying. Brian deserves that at least. As I edged out of downtown I turned off right before the bridge to our neighborhood. A stop at the local fish market would solve all my problems. I picked up a nice piece of halibut because I was sure that combined with the veggie I had on hand it would make a really nice dish.
When I got home I heated my oven and prepped my veggies. By the time the veggies were prepped and seasoned, the oven was at 400 degrees and ready to cook. I layered my veggies in a baking dish with an olive oil rubbed and seasoned halibut on top. In the oven it went for about 30 minutes. The veggies were tender & getting crispy while the fish was cooked though with its edges turning golden. Serve it up with some lemon to squeeze over it and you have yourself a great meal that could not get any easier. Not to mention healthy as well. Give it a try it is so easy; you cannot go wrong.
Oven Baked Halibut with Spiced Veggies (serves 2, but can easily be doubled)
1 piece of Halibut, about 1 pound
3 carrots, peeled and chopped into 1 inch pieces
2 parsnips, peeled and chopped into 1 inch pieces
1 leek, washed and chopped (white and light green part only), into medium sized pieces
½ tsp of ground cumin
¼ tsp of ground coriander
Sea Salt and fresh black pepper to taste
Olive oil, about ¼ cup
Fresh lemon, for serving
First, preheat your oven to 400 degrees. Place your carrots, parsnips, and leek in a bowl and toss with about 2 tbsp. (more if needed) of olive oil. You want all your veggies to be coated lightly with the olive oil. Sprinkle the veggies with the cumin, coriander, salt & pepper to taste and toss the veggies again. Pour the veggies into a baking dish so that they completely cover the bottom of the dish with a bit of it all overlapping.
Next, check your piece of halibut to be sure there are no pin bones. If you find any, remove them carefully (I keep a pair of jewelry pliers in my kitchen for this matter). Lightly brush the top of your halibut with the remainder of the olive oil and sprinkle it well with the sea salt and freshly ground black pepper. Place the halibut on top of your prepared veggies and placed in your oven.
Finally, let your halibut and veggies bake about 30 minutes. You want to see your veggies sizzle and get slightly golden, while your halibut firms up and edges turn golden. You want to remove it all from the oven when the veggies are tender when pierced with a knife and your halibut is firm to the touch. Let cool about 5 minutes before serving. Scoop out veggies onto your plates and slice halibut for serving. Squeeze lemon over it all and enjoy.
